Interesting history throughout and lots of details if you are a breadbaker.

I wish I could like this book better. I'm sure the results taste good. But the recipes are finicky and convoluted. Unless you are a dedicated fusspot, other home bread recipes in many books offer excellent results and are not so labor intensive.

I read quite a few books about bread baking but this was the only one that was worth it.....it got me into a new hobby. I loved it and the recipes actually work.
