Readers may want to reconsider using these canning methods as they are not all considered safe and recommended. Water bath canning requires more time then this book suggests in order to kill all possible micro-organisms and turning jars upside down is a very outdated (and unsafe) method of achieving a seal. Do your research elsewhere first before trying these recipes.

Instructions are detailed enough for the beginner, but also teach "old hands" . I found some ideas to try. And the prologue to the mango jam recipe is quite amusing.
