I liked this cookbook for the simplicity of the sheet pan method. If you hand wash dishes like I do this is a huge time saver. I used the smaller half sheet pan and don’t feed as many people so I halved recipes. The Roasted Crisp-Topped Eggplant with Chickpeas was wonderful. The chickpeas alone were great but the addition of the softer eggplant and crunch topping gave a lot of dimension and texture to the dish. Much easier than other Eggplant Parmesan recipes I tried. The “Teach Me How” and “Wait what?” side bars fill you in on any techniques that are new to you. This streamlines the cooking. I did not like the Smoked Cheddar and Apple Grilled Cheese recipe, however. It was extremely greasy and the bread too hard to crunch through. Also, the use of mayonnaise gave the sandwiches a strange flavour. With all the butter on the pans I didn’t see the need for it.
